What you'll need:
- 120g plain flour
- 30g almond flour
- 60g MaxiNutrition MaxWhey vanilla protein powder (or any MaxiNutrition protein powder)
- 30g runny peanut butter
- 1 large egg
- A handful of chocolate chips
- 30g maple syrup or honey
- ½ teaspoon baking soda
Method:
Step 1: Preheat the Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Step 2: Mix the Dry Ingredients
In a large bowl, combine plain flour, almond flour, protein powder, and baking soda.
Step 3: Mix the Wet Ingredients
In a separate bowl, whisk together peanut butter, maple syrup (or honey), and the egg until smooth.
Step 4: Combine Wet and Dry Mixtures
Pour the wet mixture into the dry ingredients and stir until fully combined into a dough. Add a handful of chocolate chips (and maybe even some spooky Halloween sprinkles for fun!).
Step 5: Shape the Cookies
Scoop out 1–2 tablespoons of dough for each cookie, roll into balls, and place on the baking sheet. Flatten each cookie slightly with your hand or the back of a spoon.
Step 6: Bake
Bake for 10–12 minutes or until the edges are golden brown. The cookies should still be a little soft in the centre.
Step 7: Cool and Enjoy
Let the cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Tips & Tricks
- Extra spooky: Add edible googly eyes or orange and black sprinkles before baking to make them extra fun!
- Switch it up: Swap chocolate chips for mini marshmallows or cranberries for a little Halloween twist.
